Like many of my winemakers, Yannick Paquet comes from a multi-generational winemaking family. His great grandfather grew grapes and also made barrels. His grandfather re-settled the domaine in the Pouilly-Fuissé region. His father, Jean-Paul, enlarged the estate and moved it to the town of Fuissé. In 2005, Yannick completed his studies in enology and viticulture and joined the family business. He and his wife, Ophelie, then moved the estate to a larger facility in Chaintre during the 2020 harvest.
Ironically, that same harvest saw the first vintage of Premier Cru Pouilly-Fuisse. 24 parcels were redesignated as Premier Cru vineyards. Yannick is blessed to own rows of vines in 4 of those parcels. The best is their Vers Cras, which is the only Premier Cru Pouilly-Fuisse that we import.
The Paquet winemaking style is very traditional. They only harvest by hand. They use old oak to mature their wines because they don’t want the oak flavors to mask the wonderful qualities that their hallowed vineyards impart on the Chardonnay grapes. They are even experimenting with ceramic vessels to age their wines.
Yannick uses his multi-generational experience every day to grow great grapes and then make excellent wines. He patiently “watches and listens to” the grapes as they grow and then patiently “watches and listens to” the wines as they mature in the cellar. You’ll find that he does his work very well. The wines are authentic to the unique land in the Pouilly-Fuissé region and exhibit remarkable finesse and elegance.
